Instead of traditional buffalo wings, try these tasty and healthy Vegan Buffalo Rolls. They are a tasty and filling appetizer or light meal because they are high in protein and flavor. The spicy buffalo chickpea filling wrapped in fresh collard green leaves is sure to make your mouth water.
Ingredients:
- 1 cup cooked quinoa
- 1 cup canned chickpeas, drained and rinsed
- 1/2 cup finely chopped celery
- 1/4 cup hot sauce
- 2 tablespoons nutritional yeast
- 1 tablespoon ground flaxseed
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 4 large collard green leaves, stems removed
- 1/4 cup vegan ranch dressing store-bought or homemade
Instructions:
In a large mixing bowl, mash the chickpeas with a fork or potato masher
Add cooked quinoa, celery, hot sauce, nutritional yeast, ground flaxseed, olive oil, garlic powder, onion powder, salt, and pepper to the bowl
Mix until well combined
Place a collard green leaf flat on a clean surface
Spoon about 1/4 of the chickpea mixture onto the center of the collard green leaf
Fold the sides of the collard green leaf over the filling, then roll it up tightly, similar to a burrito
Repeat with the remaining collard green leaves and filling
Slice each roll in half diagonally
Serve with vegan ranch dressing for dipping
