Blueberry Ice Pops with Vanilla

Enjoy the refreshing taste of blueberries with a touch of vanilla in these delightful ice pops. Perfect for beating the summer heat

Ingredients:

  • 2 cups fresh blueberries
  • 1/2 cup water
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions:

Put the blueberries, water, and granulated sugar in a small saucepan

Over medium heat, stir the mixture every now and then until the blueberries break down and the consistency gets a little thicker, which should take about 5 to 7 minutes

Take the mixture off the heat and let it cool down a bit

Put the mixture in a food processor or blender and blend it until it is smooth

Add the vanilla extract and mix well

Make sure there is some room at the top of the ice pop molds for the pops to rise

Put sticks for ice pops into the molds

While the ice pops are making, freeze the molds for at least 4 hours

Run some warm water over the molds for a short time to loosen the ice pops and then take them out
