Gluten-Free Instant Pot Taco Pasta

Enjoy the flavors of tacos in this gluten-free Instant Pot taco pasta dish. Its easy to prepare and perfect for a quick weeknight dinner. The Instant Pot ensures that the pasta cooks perfectly and absorbs all the delicious flavors of the taco seasoning, tomatoes, and veggies.

Ingredients:

  • 1 lb gluten-free pasta
  • 1 lb ground turkey
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 can 14
  • 5 oz diced tomatoes
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 packet gluten-free taco seasoning
  • 2 cups gluten-free chicken broth
  • 1 cup shredded cheese optional
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional
  • Sour cream or dairy-free alternative for topping optional

Instructions:

Put the Instant Pot in saut mode

Put in the onion, bell pepper, and ground turkey

Its done when the turkey is browned and the vegetables are soft

Black beans, corn, taco seasoning, gluten-free pasta, and chicken broth should all be mixed in

Lock the lid shut

For 5 minutes, set the Instant Pot to high pressure on its own

Do a quick release of pressure when the food is done cooking

Open the lid slowly

Add shredded cheese and stir until melted if you want to

Add pepper and salt to taste

If you want, you can serve it hot with fresh cilantro and sour cream or a dairy-free alternative on top
