These Baked Chicken Tacos are a tasty and simple change from regular tacos. The chicken and fresh toppings are baked just right, and the salsa sauce gives it a zesty kick. This dish is great for any event

Ingredients:

  • 1 lb boneless, skinless chicken breasts
  • 1 packet taco seasoning mix
  • 1 cup shredded cheddar cheese
  • 8 small taco shells
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup diced bell peppers any color
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 1 lime, cut into wedges

Instructions:

Preheat your oven to 375F 190C

Place the chicken breasts in a baking dish and sprinkle the taco seasoning evenly over both sides of the chicken

Cover the baking dish with aluminum foil and bake for 25-30 minutes or until the chicken is cooked through

Remove the chicken from the oven and use two forks to shred it into bite-sized pieces

While the chicken is baking, warm the taco shells in the oven for about 5 minutes

To assemble the tacos, fill each taco shell with the shredded chicken, diced tomatoes, red onion, bell peppers, and cheddar cheese

Top each taco with a sprinkle of chopped cilantro

In a small bowl, mix the sour cream and salsa to create a creamy sauce

Drizzle the sauce over the tacos and serve with lime wedges on the side
