Apple Cinnamon Protein Muffins

Its hard to believe that these apple cinnamon protein muffins are both tasty and full of protein. Theyre a healthy and filling way to eat breakfast or a snack.

Ingredients:

  • 1 cup oat flour
  • 1/2 cup vanilla protein powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup honey
  • 1/4 cup unsweetened applesauce
  • 1/4 cup Greek yogurt
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1 cup diced apples
  • 1/4 cup chopped walnuts optional

Instructions:

Warm your oven up to 350 F 175C and put paper liners in a muffin tin

Vanilla protein powder, baking powder, baking soda, cinnamon, and salt should all be mixed together in a bowl

Put the applesauce, Greek yogurt, almond milk, vanilla extract, and eggs in a different bowl

Use a whisk to mix the ingredients together

Add the wet ingredients to the dry ones and mix them together just until they are mixed

Add the diced apples and chopped walnuts if using slowly

Fill each muffin cup with the same amount of batter

In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

For a few minutes, let the muffins cool in the pan

Then, move them to a wire rack to cool completely
