Ingredients:
- 4 eggs
- 1 cup coconut milk
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2-3 green chilies, slit
- 1/2 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- 2-3 tbsp vegetable oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
Hard-boil the eggs, then peel them and set them aside
In a pan with oil, heat it up and add the chopped onions
Cook them in butter until they turn golden brown
Cut up the green chilies and tomatoes and add them
Keep cooking until the tomatoes get soft and the oil starts to separate
Salt, turmeric powder, cumin powder, coriander powder, and red chili powder should all be added
After a few minutes of cooking, the spices should smell good and be well-roasted
Add the coconut milk and mix it in well
Let the gravy cook for 5 to 7 minutes, or until it gets a little thicker
Add the boiled eggs to the curry after cutting them in half
Let the eggs soak up the flavors for another 5 minutes while the sauce simmers
Add the garam masala and fresh coriander leaves on top
Serve hot with paratha or steamed rice
