Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup gluten-free soy sauce or tamari
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon cornstarch
- 2 tablespoons water
- Sesame seeds and chopped green onions for garnish optional
Instructions:
Preheat your oven to 400F 200C
In a small saucepan, combine the gluten-free soy sauce or tamari, honey, rice vinegar, minced garlic, and grated ginger over medium heat
Bring to a simmer and cook for 2-3 minutes, stirring occasionally
In a small bowl, mix the cornstarch and water until smooth to create a slurry
Pour the slurry into the saucepan with the teriyaki sauce and whisk until well combined
Cook for another 1-2 minutes until the sauce thickens
Remove from heat and let it cool slightly
Place the chicken breasts in a baking dish and pour half of the teriyaki sauce over them, making sure they are evenly coated
Bake the chicken in the preheated oven for 20-25 minutes or until cooked through, basting occasionally with the remaining teriyaki sauce
Once the chicken is cooked, remove it from the oven and let it rest for a few minutes
Garnish with sesame seeds and chopped green onions if desired, then serve hot
