Ingredients:
- 2 cans chickpeas, drained and rinsed
- 1/4 cup gluten-free soy sauce
- 2 tablespoons rice vinegar
- 3 tablespoons maple syrup
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1/4 teaspoon red pepper flakes
- 2 tablespoons cornstarch
- 2 tablespoons water
- 2 green onions, sliced for garnish
- Cooked rice for serving
Instructions:
In a small bowl, mix together soy sauce, rice vinegar, maple syrup, garlic, ginger, and red pepper flakes to make the sauce
In a separate bowl, whisk together cornstarch and water to create a slurry
Heat a large skillet over medium heat and add the chickpeas
Cook for 5-7 minutes until they start to brown slightly
Pour the sauce over the chickpeas and stir to coat evenly
Cook for another 2-3 minutes until the sauce thickens
Add the cornstarch slurry to the skillet and stir well to combine
Cook for an additional 2-3 minutes until the sauce reaches desired thickness
Remove from heat and garnish with sliced green onions
Serve over cooked rice and enjoy
