Ingredients:
- 2 cups almond flour
- 1/2 cup chopped pecans
- 1/4 cup maple syrup
- 2 eggs
- 1/4 cup melted coconut oil
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp vanilla extract
Instructions:
Preheat your oven to 350F 175C
In a mixing bowl, combine almond flour, chopped pecans, baking soda, and salt
In a separate bowl, whisk together maple syrup, eggs, melted coconut oil, and vanilla extract
Pour the wet ingredients into the dry ingredients and mix until well combined
Line a muffin tin with paper liners or grease the cups with coconut oil
Divide the muffin batter evenly into the cups
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely
